Mediterranean Tuna and White Bean Salad

Mediterranean tuna and white bean salad with colorful tomatoes and cucumbers from the garden. Fresh, high in protein, and ready in just 10 minutes.

Ingredients

  • 1 can tuna in its own juice, approx, 130–150 g drained weight
  • 120 g white beans, drained
  • 150 g colorful tomatoes
  • 1/2 small cucumber
  • 1/4 red onion
  • 1 tbsp freshly chopped basil
  • 1 tbsp good-quality olive oil
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp white balsamic vinegar
  • Salt
  • Freshly ground black pepper

Instructions

  • Place the tuna and white beans in a sieve and drain well. Rinse the beans briefly under cold water. Wash the freshly harvested tomatoes and, depending on their size, halve, quarter, or cut them into bite-sized pieces. Especially when using colorful tomatoes, let their different shapes and colors shine.
  • Wash the cucumber and cut it into small pieces as well. Peel the red onion and slice it into very thin half-rings. If raw onion is a little too strong for your taste, soak the onion slices in cold water for about 5 minutes. Drain well afterward – this will make their flavor much milder.
  • Add the tomatoes, cucumber, white beans, tuna, and onion to a large bowl. Mix the olive oil, lemon juice, and white balsamic vinegar, then season with salt and freshly ground black pepper. Pour the dressing over the salad and gently toss everything together. Finish with plenty of freshly chopped basil. Serve immediately and enjoy.
