Colorful tomatoes, crunchy cucumbers, and fresh herbs straight from the garden: this Mediterranean tuna and white bean salad brings the summer harvest to your plate in just 10 minutes. In August, I can currently walk through my vegetable garden with a small harvest basket almost every day. Tomatoes and cucumbers in particular are abundant right now – and to me, these ingredients simply taste best when freshly picked.

I especially love using colorful tomatoes for quick summer dishes. Every variety tastes a little different: some are particularly sweet, others fruity or slightly tangy. Paired with a crisp cucumber, they really don’t need much else. The yellow tomato variety with the slightly dark markings comes from my last visit to Denmark and brings back wonderful memories.

For this Mediterranean tuna and white bean salad, I combine my freshly harvested tomatoes and cucumbers with white beans, tuna, red onion, and plenty of fresh herbs. A very simple dressing made with good olive oil, lemon, and white balsamic vinegar is all it needs. In about 10 minutes, the garden harvest turns into a delicious and satisfying lunch.

From Garden to Plate: Tomatoes & Cucumbers

When tomatoes and cucumbers are ready to harvest at the same time, simple recipes like this one are perfect for me. Especially when vegetables are freshly picked and full of flavor, I don’t want to overpower them with a heavy dressing or too many additional ingredients. That’s why the tomatoes get to play the starring role in this salad. It looks especially beautiful when made with different varieties and colors.

Small cherry tomatoes can simply be halved, while larger tomatoes can be cut into bite-sized pieces. Then I add a freshly harvested cucumber for plenty of crunch. White beans and tuna turn this summery garden salad into a complete meal that is satisfying while still tasting wonderfully fresh.

Ingredients

  • 1 can tuna in its own juice, approx, 130–150 g drained weight
  • 120 g white beans, drained
  • 150 g colorful tomatoes
  • 1/2 small cucumber
  • 1/4 red onion
  • 1 tbsp freshly chopped basil
  • 1 tbsp good-quality olive oil
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp white balsamic vinegar
  • Salt
  • Freshly ground black pepper

Instructions

  • Place the tuna and white beans in a sieve and drain well. Rinse the beans briefly under cold water. Wash the freshly harvested tomatoes and, depending on their size, halve, quarter, or cut them into bite-sized pieces. Especially when using colorful tomatoes, let their different shapes and colors shine.
  • Wash the cucumber and cut it into small pieces as well. Peel the red onion and slice it into very thin half-rings. If raw onion is a little too strong for your taste, soak the onion slices in cold water for about 5 minutes. Drain well afterward – this will make their flavor much milder.
  • Add the tomatoes, cucumber, white beans, tuna, and onion to a large bowl. Mix the olive oil, lemon juice, and white balsamic vinegar, then season with salt and freshly ground black pepper. Pour the dressing over the salad and gently toss everything together. Finish with plenty of freshly chopped basil. Serve immediately and enjoy.

Colorful Tomatoes Make All the Difference

Of course, this salad works with any type of tomato. But if you grow different varieties in your garden or can find them at your local farmers’ market, it’s definitely worth combining several varieties.

A mix of yellow, red, orange, and dark tomatoes not only looks beautiful but also brings a variety of flavors to the plate. And because the tomatoes aren’t cooked, their individual flavors really get a chance to shine.

A Simple Dressing Is All You Need

For freshly harvested summer tomatoes, I don’t think you need a complicated dressing. A little good-quality olive oil, fresh lemon juice, and a small splash of white balsamic vinegar are more than enough. Add some salt and freshly ground black pepper, and that’s it.

As you toss the salad, the tomatoes will release some of their juices, which combine beautifully with the dressing. Let everything sit for a few minutes before serving – and make sure to enjoy all those flavorful juices at the bottom of the bowl, too.

A Quick Lunch Made with Your Own Harvest

These are exactly the kinds of recipes I love most in summer: taking a stroll through the garden, picking a few ripe tomatoes and a cucumber, and having lunch on the table just a few minutes later.

I always like to keep white beans and tuna in the pantry for recipes like this. There’s no need to cook anything in advance, yet you still get a salad that works not only as a side dish but as a complete meal. And if you happen to have an especially generous tomato harvest, feel free to add even more.
